Are you looking for an easy vegan recipe for dinner or lunch? Craving some Mexican food. Full of flavor, and color and perfect to give the flor de jamaica (hibiscus flower) a second use!
Ingredients
- 1 cup – Flor de jamaica (Hibiscus flower)
FOR THE ADOBO SAUCE
- 1/2 cup Orange juice (no pulp)
- 1/2 cup Vegetable stock
- 1 Chipotle chili
- 2 tbs Achiote paste
- 1/4 Onion
- 2 tbs Apple vinagre
- 1/2 tsp Cumin
- 1/2 tsp Oregano
- Tortilla de maíz
- Onion in small squares
- Fresh Cilantro
- Can of refried beans
- Avocado
- Lime
- Vegetable oil
Preparing the Jamaica flower
STEP 1: Wash the Jamaica flower
STEP 2: Put the flower to boil. The water must cover all the Jamaica (around half a liter of water, add more if necessary to cover the flower). Let it come to a boil and then stem for 10 more minutes. Remember you can save this concentrated tea to make some delicious Agua de Jamaica.
STEP 3: Drain the flower, and save the water to make Agua de Jamaica. To make Agua de Jamaica add sugar, ice, water, and some concentrated tea. Adjust to taste the quantities
STEP 4: Now you have ready the flower to continue!
